Answer: The method for turning off Golden Guns depends on whether you have the DLC download or the Rockstar Games unlock version.

Downloadable Content (DLC) Golden Guns: You can enable and disable these Story Mode Golden Guns in the in-game Pause Menu under Options->Config.

Rockstar Games Unlock Golden Guns: This Story Mode unlock was recently applied to all players in the 6/19/14 Red Dead Redemption Title Update, and applies only to the Cattleman Revolver and Repeater Carbine. You can disable these gold textures by entering the following codes:

Note: All codes can be performed while in Story Mode gameplay, by holding all listed buttons simultaneously for 5 seconds. It is normal that the weapon wheel may appear and your character may move while holding these buttons.

Note: Turning off Golden Guns does not save to your Story Mode file, so the code would need to be used each time the Story Mode file is loaded.
